Compete Recipe of the Week: Soft Serve "Ice Cream"

Looking for a cold summer treat that won't interfere with your health and fitness goals? This recipe is great, easy, and very versatile. All you need is a few frozen bananas and the variations are up to your imagination. Adding a scoop of chocolate or vanilla protein powder not only disguises the banana flavor, but also creates a protein-packed after dinner, post workout, or afternoon snack.

Total Prep Time: About 5 minutes Serves: 1-2 (depending on how much you make at one time) Recipe below is for one person. To increase the serving size add more bananas and mix-ins.  Utensils: knife, food processor Ingredients:

  • 1 to 1.5 frozen bananas
  • 1 scoop protein powder
  • splash of coconut milk (or milk of choice)
  1. Using frozen banana(s): {peel bananas, wrap in plastic wrap, store in freezer} slice them in 1-2 inch slices and add to food processor.
  2. Turn on food processor and mix for 1-2 minutes, stopping to scrape down the sides of the bowl when necessary. (increase processing time if using more bananas) Add your mix-ins. Here, I would add 1 scoop of protein powder and 1 Tbsp peanut butter and then process again for another minute or so. A splash of milk may be necessary if adding dry ingredients to the mix.
  3. Once bananas resemble a soft serve ice cream appearance it's ready to eat! You can also freeze it if you'd prefer a more frozen ice cream-like treat.
Variations: add protein powder, fresh or frozen fruit, nut butters, unsweetened cacao, chocolate chips, vanilla extract, etc. Don't be afraid to get creative.
